Chicken Broth (Whole 30, Instant Pot)

While I was doing other things yesterday I let my Instant Pot make some Whole 30 chicken broth.

Here are the ingredients:

1 pack of chicken thighs

2 whole carrots

1 whole onion sliced in half

1 chunk of celery stalks (from the middle, with leaves)

1 TBSP Garlic Salt

1 TSP Black Pepper

16 Cups Water

Put all of this in the pot, and push the Soup/Broth button. My chicken was frozen, so I set the timer to 30 minutes. Once the time is up, the Instant Pot will continue to keep the broth warm and the flavor will just get better. (Another note about flavor: I don't peel the onion or carrots. Just leave them on and you will have a richer tasting broth.)

Drain the broth through a fine strainer and then ladle into jars for storage. There are no preservatives in this, so it will have to be kept in the refrigerator.

If you are a chicken salad fan, that is the perfect use for the chicken you just cooked. You can also use it in soup or fajitas or anything you want, really.

Enjoy your broth! (and your chicken!)

**This recipe can be made on the stove top as well. Just add all ingredients to a pot and bring to a boil. Continue to boil until chicken is cooked through, and then allow to simmer for an hour or so.
